CELERY SEED is the seed of plant closely related to celery, cultivated specifically for its aromatic, flavorful seeds. India, China, and France all cultivate celery seed. It is a biennial crop and produces seeds only in the second year. The dried ripe fruits (celery seeds) are used as spice. Leaves and stalks are used as salads in soups and as a pre-dinner appetizer. The small brown crescent shaped seeds adds the unique flavor of celery to foods without the bulk or undesired crunch of celery. In many cases, it is used whole so that the seeds explode in the mouth when they are bitten into, creating a burst of flavorful volatile oils. They are stimulant and tonic, used in asthma and for liver diseases. As a domestic medicine, seeds are used as nervine sedative and tonic. Celery seed oil is used as a fixative, as an important ingredient in perfumes, in medicine and in flavoring of different types of foods, such as meats, sausages, canned soups, sauces, celery tonics and medicinal preparations.
