Chilly grows in abundance in India,  throughout the year and so there is no scarcity and a good quantity is exported. Kashmir chilies are known for its color and pungency. The highly pungent chilly is 'Sannam' and slightly pungent chilly is 'Mundu'.  Sannam has international popularity. Whole Chillies are used . Dried chilies can be used whole with or without stalks, in curries and almost any other kind of slow-cooked liquid, as the flavor seeps out and flavors the food. A variety of ground chiles are available to be used in a wide range of curries, sauces, pickles, chutneys and pastes Red chilies are full of beta-carotene.The heat in all chilies, whether hot or mild, is due to the flavorless, odorless, colorless chemical known as capsaicin measured in Scoville units Capsaicin seems to have a positive effect on blood cholesterol, and also works as an anticoagulant.
